Greek Chickpea Salad

Ingredients:
- 1 can of chickpeas (drained)
- 1 Tbsp greek dressing or olive oil
- 1 english cucumber
- 1 package of cherry tomatoes
- ½ red onion
- Salt and pepper to taste
- Optional: feta cheese to taste
Instructions:
- Open your can of chickpeas and drain all of the
liquid out of the can so that only the chickpeas remain.
- Chop up the cucumbers into bite-sized pieces,
chop the cherry tomatoes into halves, and dice the red
onion.
- Combine all chopped ingredients into a large bowl with the
can of drained chickpeas.
- Add in your olive oil or greek dressing and stir into the bowl.
- Add salt and pepper to taste and top with feta cheese(Optional).
- Lastly, stir together to combine and enjoy!
Variations:
- Can switch greek dressing for olive oil and add other seasonings like salt and pepper.
- Add other vegetables as well like bell peppers for more color and flavor.
