Red Sauce Pasta with bow tie pasta and spinach

Cooking On Campus


  • 1 cup of uncooked noodles
  • 1/2 zucchini, diced
  • 1/2 cup of spinach, chopped
  • 1/4 white onion, diced
  • 1 can tomatoes
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp of oil
  • salt and pepper to taste


  1. Boil water in a pot. Add pasta and cook for about 8 minutes until tender.
  2. Dice and chop the spinach, onions, and zucchini.
  3. Heat oil in a pan and add onions and zucchini and cook until soft.
  4. Add in tomatoes, spinach, and spices and stir together.
  5. Turn off the heat on the sauce and mix in your noodles. Enjoy!


  1. Use whatever veggies you have on hand, including frozen veggies can be quick and easy too!
  2. This can be a great recipe to make extra for leftovers the next day!
  3. Ground beef or chicken could be added as well!
