Choosing Chia

Lentil Chili 

Ingredients:

  • 1 Can of Brown Lentils
  • 1 tbsp Vegetable Oil
  • 1 Medium Yellow Onion, diced 
  • 1 Jalapeno, diced 
  • 1 Red Bell Pepper, Chopped
  • 1 Can of Crushed Tomatoes
  • 1 Can of Kidney Beans
  • 1 Can of Black Beans
  • ½ Cup of Vegetable Broth
  • 1 tsp Garlic Powder
  • 1/2 Tsp Cumin
  • 2 tsp chili powder
  • 2 tsp paprika
  • Salt and Pepper to taste

Instructions:

  • Heat oil over medium heat and add in diced onions. Saute until fragrant. 
  • Add vegetable broth, bell peppers, jalapeno, tomatoes, and lentils.
  • Bring mixture to a simmer and add cumin, chili powder, paprika, salt, and pepper. Stir until combined
  • Let simmer for about 10-15 minutes. 
  • Serve and let cool for 5 minutes before enjoying!     

Variations:

  • Add a dollop of sour cream, other types of beans, different veggies, etc.
  • Serve with cornbread for a classic "homestyle" dinner!
  • Different colors of lentils can also give you a variety of nutrients and make interesting colors for your chili!
