Ramen Pad Thai

Serving size: 1 cup
Ingredients:
2, 3 oz (6 oz total) Ramen Noodle packages
2 cloves of garlic, minced
1 bunch of green onions, chopped
1 red bell pepper, chopped
1 cup brocolli, chopped
1/2 cup shredded carrots
1 teaspoon olive oil
1 tablespoon lime juice
2 tablespoons pre-made Pad Thai sauce
2 large eggs
2 tablespoons chopped peanuts
Instructions:

Prepare the noodles as indicated on the package (without the seasoning packet), strain once cooked.

Chop vegetables and set aside

Heat a frying pan to medium-high and add the olive oil.

Combine the cooked noodles, garlic, and vegetables in the pan, stirring often.

Add lime juice and Pad Thai sauce and stir until well combined.

Whisk the two eggs in a small bowl and add to the pan.

Continue to stir until the eggs are completely cooked through.

Sprinkle the peanuts on top of the noodles for an added crunch
Variations:

Add cooked shrimp or chicken for a heartier dish.

Add 1 tsp of red pepper flakes for an extra kick.
