We had a full class at our Sushi Bar class last week! Thank you to everyone who came out and joined in on the fun! We taught students how to make some delicious sushi night recipes that are easy to make at home.

We started off the class by making a cucumber salad. This cucumber salad is super refreshing and so easy to make! First, we chopped up english cucumbers and red onion, then we tossed the vegetables in a bowl with added sesame oil, sesame seeds, and red pepper flakes. Who says healthy foods need to be expensive and complicated? Not us!

For the main dish, we prepared a Teriyaki Tofu Bowl. We cut firm tofu into bite sized cubes and covered them in a little cornstarch. If you add cornstarch, it will add a layer of crispiness! Next, we sliced red onions and broccoli, then prepared a simple teriyaki sauce with brown sugar, soy sauce, and sesame oil. We sauteed the tofu for a few minutes in a skillet with some vegetable oil, and once the cubes were golden brown, we placed them aside and cooked vegetables in the same pan. After two minutes, we added the tofu back in along with the teriyaki sauce for another two minutes. Finally, we added the teriyaki tofu and vegetables to a bowl of pre-cooked white rice. You can substitute white rice with brown rice or quinoa for a healthier and high fiber meal.

For the big finish, Marleen showed everyone how to make California Rolls! The sushi rice was prepared before class so all we had to do was slice up some avocado, cucumber, and imitation crab. Next, we placed rice, avocado, and imitation crab onto seaweed sheets (nori) and rolled it all up on our sushi mats. Everyone had fun trying this out and loved this recipe!

We hope everyone enjoyed our Sushi Bar night! We enjoyed teaching students how to make healthy, easy, and inexpensive recipes.
