Lentil Soup

Lentil soup with broth and vegetables

Ingredients:

  • 2 tbs Olive Oil
  • 3 cups frozen chopped celery, carrot, onion, mix 
  • 1 tsp garlic powder or 2 minced garlic cloves
  • 4 cups vegetable broth or chicken broth
  • 1.5 cups of cooked lentils (brown or green)
  • 1 can of diced tomatoes
  • 3 cups of chopped kale

 

Instructions:

  1. In a large pan, combine olive oil and frozen 

vegetables in a pan. 

  1. Add in broth, garlic powder, and lentils 

and bring to a boil. 

  1. Combine with the can of tomatoes and stir. 
  2. Turn off the heat and add in the kale. Serve and enjoy!

 

Variations:

  • Add in any other types of vegetable or beans to create variety in this recipe. 
  • Use seasonal vegetables to get a different flavor each time. 
  • Experiment with different species if you have them like crushed red pepper, thyme, etc.
