Greek Chickpea Salad

The Toasty Kitchen

Ingredients:

  • 1 can of chickpeas (drained)
  • 1 Tbsp greek dressing or olive oil
  • 1 english cucumber
  • 1 package of cherry tomatoes 
  • ½ red onion 
  • Salt and pepper to taste 
  • Optional: feta cheese to taste 

 

Instructions:

  1. Open your can of chickpeas and drain all of the 

liquid out of the can so that only the chickpeas remain. 

  1. Chop up the cucumbers into bite-sized pieces,

chop the cherry tomatoes into halves, and dice the red 

onion.

  1. Combine all chopped ingredients into a large bowl with the 

can of drained chickpeas.  

  1. Add in your olive oil or greek dressing and stir into the bowl. 
  2. Add salt and pepper to taste and top with feta cheese(Optional). 
  3. Lastly, stir together to combine and enjoy!

 

Variations:

  • Can switch greek dressing for olive oil and add other seasonings like salt and pepper. 
  • Add other vegetables as well like bell peppers for more color and flavor.
