Chickpea Curry

Gimme Some Oven

Ingredients:

  • 1 can chickpeas (drained)
  • 1/2 white onion (diced)
  • 1 garlic clove (minced)
  • 1 tbsp of curry powder
  • 1 tbsp vegetable oil
  • 1/2 tsp cumin
  • 1/2 can dice tomatoes  (6 oz)
  • 1/2 can coconut milk (7 oz)
  • salt and pepper to taste
  • chopped fresh cilantro and lime wedge 
  • 1 cup of white rice 

Instructions:

  1. In a large bottom pan, combine oil, garlic, and onions into pan

 on medium-low heat until they become fragrant.

  1. Increase the heat to medium and add curry powder and cumin. 

add in tomato and continuously stir in order to avoid burning on the bottom. 

  1. Pour in the coconut milk slowly and stir occasionally. Add in chickpeas and bring to a simmer for 10 minutes.
  2. Garnish with lime, cilantro, and serve over rice. Enjoy!

Variations:

  1. Add more or less lime and cilantro for an interesting citrus flavor. 
  2. Experiment with green curry paste as well in this recipe instead of red curry powder.
