Chocolate Covered Katie

Ingredients:

  • ½ can chickpea 
  • ½ tsp baking soda
  • ¼ tsp baking powder and salt
  • ¾ cup granulated sugar
  • ⅙ cup flour
  • ⅛ cup applesauce
  • 1.5 tbsp oil
  • ¼ cup chocolate chips, to taste

Instructions:

  1. Preheat oven to 350 degrees. 
  2. Blend Chickpeas in food processor until they are smooth. 
  3. Add all ingredients except chocolate chips until combined. 
  4. Mix in chocolate chips and pour into greased baking tray or cups
  5. Bake for 15-20 minutes or until golden brown. 

Variations:

  • Instead of chickpeas you can also blend white beans in the same amount into this recipe. 
  • Use vegan chocolate or use gluten free flour to make this recipe fitting for any dietary choices.
  • This can easily be cooked in a mug in the microwave for 30sec-1min for a more cakey consistency and for convenience!
