Meal prepping can be daunting, but with the right resources such as our cooking classes and recipes, it can be easy and fun! We had a blast last Tuesday at our Meal Prep Mania cooking class! We not only learned how to properly use a knife, but we also learned three new recipes! Our buddha bowl was paired with our yummy avocado cream sauce and our peanut butter sauce! 

Last week, Jessica and Zul walked everyone through the process of making these tasty recipes. These recipes are not only so easy and delicious, but they are also versatile which means you can easily swap out the ingredients so you can customize it to your liking! 

 

Jessica started by cooking her rice and chopping her vegetables. Once her vegetables were chopped into snack size pieces, she threw them in the oven along with her chickpeas. Chickpeas have the classic beany and nutty flavor and pairing them with vegetables adds an earthy touch to it. 

Some fun facts about sweet potatoes:

  •  Sweet potatoes are usually orange but are also found in other colors, such as white, red, pink, violet, yellow, and purple.

  •  Yams and sweet potatoes are not the same! Yams have rough textured brown skin and have a neutral flavor whereas sweet potatoes are brighter in color and have a sweet flavor!

  • Like all potatoes, sweet potatoes are a good source of fiber, potassium, vitamin C and naturally fat free!

  •  Have high vitamin A content! Vitamin A is good for  boosting your body's natural immunity against illness and infection, eye health and improved night vision, and keeping skin and the lining of some parts of the body, such as the nose, healthy

 

Zul walked us through how to make an avocado sauce and peanut sauce to pair with this colorful, delicious bowl! Some fun facts about avocados are that they are actually considered to be a fruit! Usually fruits have seeds and vegetables do not! Half of an avocado has more potassium than a half cup serving of banana! Potassium is essential for heart health and increases mucus production in the stomach, which helps prevent the irritation of the stomach lining! Avocados have oleic acid, which has been associated with reduced inflammation and shown to have beneficial effects on genes linked to cancer!
