Italian Night Promo

Ciao Wildcats. Our next Cooking on Campus Virtual class will be held on February 23rd. As you can probably guess, our theme is Italian Night. We will be teaching you how to make a hearty Avocado Pesto Linguine and a refreshing Caprese Salad.

The avocado pesto is a blend of avocado, pesto, pine nuts (walnuts can be substituted), oil, and spices that goes perfectly with any noodle. Adding avocados to a traditional pesto sauce incorporates heart-healthy monounsaturated fats along with fiber, which promotes digestion health, and antioxidants, which have been shown to reduce the risk of certain diseases. Avocados are abundant in many other health-promoting nutrients. In fact, avocados contain more potassium than a banana. Potassium has been shown to have blood pressure lowering benefits.

The caprese salad is a classic in Italy, where the red tomatoes, green basil, and white mozzarella represent the colors of the Italian flag. Tomatoes are a great source of vitamin C which helps the body’s immune system, while basil adds vitamin K, which has blood-clotting benefits, as well as antioxidants and anti-inflammatory compounds to the salad. Mozzarella contains probiotics, or beneficial bacteria, that keeps the intestines healthy. This simple yet delicious salad is great with some balsamic vinaigrette drizzled over it and is the perfect addition for a meal on a hot Tucson day.
