Thank you to everyone who came to our “Cooking with Cupid '' class! The students loved the delicious meals we made for Valentine's Day! Today, we will be teaching students how to make simple and delicious Meal Prep recipes! Meal prepping is an easy way to prepare healthy meals for the week ahead and will save you time and money and reduce your stress level when it comes to meal time. 

One recipe we are making is a Citrus Fruit Salad. This fruity salad contains mandarin oranges, blood oranges, chickpeas, pomegranate arils, kale and a sweet olive oil dressing. There are many health benefits from eating citrus fruits! They are a fantastic source of fiber, which is good for gut health, and they are all rich in vitamin C, which helps keep our skin healthy and our immune system strong.

Another great meal prep recipe is a Turkey Taco Bowl! This meal contains lean ground turkey, salsa and toppings including tomato, lettuce, green onion, cilantro, corn, black beans and shredded cheddar cheese. These vegetable toppings are rich in vitamins and minerals, which help with reducing inflammation in our bodies.

Our final recipe is Lime Cilantro Brown Rice which contains brown rice, cilantro, white onion, garlic, and lime. Brown rice is a good substitute for white rice because it is a whole grain and aids in digestion. Cilantro is a great source of vitamin K and calcium which is great for bone, hair and teeth health.
