Jack-O-Lantern Peppers
Prep Time: 20 minutes Cooking Time: 30 minutes
Equipment: measuring cups and spoons, metal spoon, chopping knife, paring knife, cutting board, baking dish
Servings: 3 Serving Size: 1 bell pepper
Ingredients:
1 cup quinoa, cooked
1⁄2 cup canned corn
1⁄2 cup canned black beans, rinsed
3 tablespoons cilantro, chopped
1⁄4 teaspoon chili powder
2 limes, juiced
3 orange bell peppers, stemmed and seeded
1⁄4 cup shredded pepper jack cheese
1⁄2 cup chunky salsa
Instructions:
1. Cook quinoa according to package.
2. Preheat oven to 350 degrees.
3. Mix quinoa, corn, black beans, cilantro, chili powder, and lime juice.
4. Carve peppers into a jack-o-lantern face with a paring knife.
5. Place stuffing in each pepper and divide cheese evenly among 3 peppers.
6. Replace stem on top of pepper and sit up in a baking dish. Bake for 15-20 minutes
7. Add desired amount of salsa.
8. Enjoy!!!
Variations:
● For added protein, replace 1 cup quinoa with 1 cup cooked, shredded chicken.
● Top with guacamole or sour cream
