Italian Twist Wrap Up

We had a blast last Tuesday at our “Italian Twist” cooking class! We learned how to make some healthy classic Italian meals including Zoodle bolognese, Caprese salad, and bruschetta! All of these recipes were super easy to make and super healthy!

    The first meal we prepared was the Zucchini “Zoodle” Bolognese. First we made the zoodles by using a spiralizer and zucchini. This fun crank-style cooking gadget makes curly noodles out of the vegetable! Next, we cooked lean ground beef with some olive oil in a pan on medium-high heat for a few minutes. While the beef was cooking, Evelyn taught the class how to properly chop a red onion and garlic. It can be a little tricky when done well! Next, we placed the meat aside and onion, garlic, canned tomatoes and herbs (oregano,sage, basil)  in the pan for a couple of minutes. We used the zoodles for this meal instead of traditional spaghetti which helped boost the vegetable portion and fiber and nutrition of our dish!

    Next, Rachel taught the class how to make a caprese salad. First, we cut the mozzarella cheese into round pieces, then sliced roma tomatoes and added fresh basil. Finally, we made a quick pesto sauce in a blender, which added a ton of flavor to this refreshing caprese salad...it was so good!

    Marleen taught the class how to make a simple bruschetta. We sliced a fresh baguette from a local Tucson bakery, Barrio Bread! Then, we chopped up tomatoes, red onion, fresh basil, and garlic, mixed it all together and topped our sliced bread with it! Simple and delicious food!
