Get ready for the Spooky Specialites cooking class next Tuesday! We will be learning how to make some tasty Halloween treats including Jack O’Lantern Peppers, Wicked Punch, and Popcorn Balls!

First, we will make some delicious Wicked Punch to sip on. This punch consists of pineapple juice, orange juice, green Jell-o, water, and ginger ale. It’s a sweet drink and cool punch that’s perfect for any Halloween party! You can cut the sugar content of this punch by substituting club soda in place of the ginger ale, or add ½ club soda and ½ ginger ale! Pineapple juice and orange juice both contain vitamin C, which can help fight skin damage, reduce wrinkles, and improve the overall health of your skin!

For the main dish, we are making Jack O’Lantern Peppers! The Jack O’Lantern Peppers recipe includes nutritious foods including quinoa, red pepper, corn, black beans, lime, cilantro, and pepper jack cheese. Quinoa is a whole grain food and a complete plant-based protein that contains a variety of vitamins and minerals including magnesium and iron. It’s also a healthy substitute for rice or pasta!

Finally, we will learn how to make Popcorn Balls! Not many people know this but plain popcorn can be a healthy snack. Popcorn is a whole grain and contains fiber, which helps keep us feeling full. For this recipe, we will be using popcorn, butter, Tootsie rolls, orange food coloring and chocolates for a Halloween treat!

We look forward to seeing you at our next class! You’ll definitely want to make these Spooky Specialties for Halloween. Please join us at 5:15 pm at Outdoor Rec on October 22nd. It is $7.00 to register for the class online at https://nutrition.arizona.edu/content/cooking-campus or at the front desk!
