Mashed Chickpea Salad
Ingredients:
- 1 can of chickpeas
- ¼ cup of greek yogurt or mayonnaise
- chopped celery
- chopped red bell pepper
- diced red onion
- 1 tsp dill
- 1 tsp black pepper
- 2-3 tsp of dijon mustard
Instructions:
- Open a can of chickpeas and drain the liquid. Pour the chickpeas into a large mixing bowl and mashed with a fork until they are about halfway mashed.
- Chop the celery, bell pepper, and red onion and add into the large mixing bowl and stir to combine.
- Add the greek yogurt or mayo into the large mixing bowl with mustard, dill, and black pepper. Stir until all is combined.
- Serve with crackers or in between bread as your plant-based take on the “Chicken Salad Sandwich”!
Variations:
- Use this salad to make a chickpea salad sandwich for your next take away lunch on the go! Add your own vegetables inside the sandwich like cucumbers, romaine, arugula, or even tomato slices!
- Feel free to add things like buffalo sauce, ranch dressing, or even sriracha to add new and interesting flavors to this meal.
- As part of a “Bento Box” lunch, you can have a side of chopped veggies or even a homemade treat on the side!
